Yesterday I put her to work making 18 quarts of salsa. Delicious! My previous batch of the stuff got a little "roasted" (burned), but over the winter Dave and Brody helped eat it all up so my empty jars needed a little refilling.

Needless to say, I was extra pendiente with this batch to make sure we didn't end up with more roasted stuff again.

The roasted stuff did have a "smoky" flavor, and no one would have known it was burned if you hadn't told them. I thought it was quite good, myself.
Wow, good for you Jord. That's impressive. I never owned one of those pressure canners. You go girl!
You are SO GOOD about food storage! Way to go, Jord. We're driving to your house if the world starts ending :)
